Zucchini and Haloumi Fritters with Yoghurt

Zucchini and Haloumi Fritters with Quark

  • 2 zucchinis
  • 1 onion, grated
  • 250g haloumi, grated
  • 1/2 plain flour
  • 1 tbsp Natural yoghurt
  • 2 eggs
  • 1 tbsp chopped fresh parsley
  • Coconut oil, to fry
  • Salt and pepper to taste


  1. Grate the zucchinis, and then squeeze out as much liquid as possible. The grate the onion and haloumi. Place in a bowl and add flour, eggs, Natural Yoghurt and dill. Season with salt and black pepper and stir to combine.
  2. Heat the coconut oil in a frying pan over medium heat and fry, in batches, for 2 minutes each side until golden. Drain on paper towel.
  3. Serve the fritters warm with a dollop of Natural Yoghurt.
