Our Zucchini and Haloumi Fritters are the perfect hidden-veg recipe packed full with our protein and calcium rich Natural Yoghurt. A quick and easy solution for a mid-week dinner and perfect for lunch the next day!
Grate the zucchinis, and then squeeze out as much liquid as possible. The grate the onion and haloumi. Place in a bowl and add flour, eggs, Natural Yoghurt and dill. Season with salt and black pepper and stir to combine.
Heat the coconut oil in a frying pan over medium heat and fry, in batches, for 2 minutes each side until golden. Drain on paper towel.
Serve the fritters warm with a dollop of Natural Yoghurt.
