Vegetarian Chilli Beans

Ingredients

  • 2 tsp extra virgin olive oil
  • 1 white onion, diced
  • 1 tsp chilli flakes
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 garlic cloves, crushed
  • 1 can black beans, drained
  • 1 can cannellini beans, drained
  • 2 x 400g cans crushed tomatoes
  • 1/2 cup vegetable stock
  • 3 bay leaves
  • Salt and pepper to taste
  • Handful of fresh coriander
  • Grilled tortillas, to serve
  • 1 cup Rokeby Farms Natural Probiotic Yoghurt, for drizzling

Method

  1.  In a large saucepan, sauté the garlic and onion in the olive oil. Once softened, add the chilli flakes, cumin and coriander powder and stir for 1 minute.
  2.  Add the stock, black beans, cannellini beans and crushed tomatoes. Add the bay leaves and simmer for 45 minutes with lid off.
  3. To serve, top the beans with salt and pepper to taste, coriander and a generous drizzle of probiotic yoghurt.
  4. Enjoy with warmed tortillas.
