Thai-Style Lamb Shanks

Ingredients

  • 3 lamb shanks
  • 1 onion, roughly chopped
  • 1 carrot, roughly chopped
  • 3 baby potatoes, halved
  • 2 cups beef stock
  • 5 kefir lime leaves
  • 1 lime, sliced
  • 1 handful of cashews
  • 1 cup Massaman curry paste
  • 1 cup coconut cream
  • 1 1/2 cups Rokeby Farms Natural Probiotic Yoghurt, to drizzle at end
  • Fresh red chilli, sliced, to serve
  • Fresh coriander, to serve

Method

  1. Preheat oven to 160°C.
  2. In a casserole dish, add curry paste, onion and lamb shanks and cook on stovetop for a few minutes until browned. Add potatoes, carrots, kefir lime leaves, cashews coconut milk and stock, then bring to simmer, cover with lid and bake in oven for 2 hours and 45 minutes or until the meat starts to fall from the bone.
  3. Once finished baking, remove casserole dish from oven and let it cool slightly. Top with sliced chilli, fresh coriander, squeeze of lime and drizzle with Natural Probiotic Yoghurt.
  4. Serve with rice and steamed vegetables. Enjoy!
