Strawberry Banana Loaf

Ingredients

  • 2 cups SR flour
  • 1 tsp baking powder
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 cup coconut oil – melted
  • 1/2 cup Rokeby Vanilla Probiotic Yoghurt
  • 2 bananas – mashed
  • 1/2 cup fresh or frozen strawberries – sliced

Method

  1. Preheat oven to 180’c. Grease a loaf tin.
  2. Combine all dry ingredients in a large bowl. Combine all wet ingredients except strawberries in a small bowl and whisk well to combine.
  3. Pour wet ingredients into dry ingredients and stir well, add strawberries and mix gently until combined.
  4. Pour mixture into prepared tin and bake for 45 – 55 minutes or until golden and cooked through.
