Method
- To prepare the salmon patties, combine all ingredients in a large bowl and mix well to combine. Form spoonfuls of mixture into round flat patties and set aside.
- Heat oil in a frypan and cook salmon patties in batches until golden on both sides.
- For the mint yoghurt, combine all ingredients and mix well.
- Serve the salmon patties hot, and drizzle or dip the minted yogurt.
