Salmon Patties with Minted Yoghurt

  • 2 cups cold mashed potato
  • 285g tin salmon (skinless and boneless)
  • 4 spring onions
  • 1/2 cup parsley chopped finely
  • Salt + pepper
  • 1/2 cup olive oil
Minted Yoghurt


  1. To prepare the salmon patties, combine all ingredients in a large bowl and mix well to combine. Form spoonfuls of mixture into round flat patties and set aside.
  2. Heat oil in a frypan and cook salmon patties in batches until golden on both sides.
  3. For the mint yoghurt, combine all ingredients and mix well.
  4. Serve the salmon patties hot, and drizzle or dip the minted yogurt.
