Method
- Preheat the oven to 200 degrees Celsius. Line a baking tray with baking paper.
- Slice the eggplant in half lengthwise and score the flesh in a criss-cross pattern with knife, cutting deep but not through the skin.
- Roast in the oven for 20 minutes until softened and golden brown.
- Spoon Natural Quark onto the roasted eggplant and top with parsley and goji berries.
