Roasted Eggplant with Quark and Goji Berries

  • 500g Natural Yoghurt
  • 1 large eggplant
  • ½ cup goji berries
  • Fresh parsley, to garnish


  1. Preheat the oven to 200 degrees Celsius. Line a baking tray with baking paper.
  2. Slice the eggplant in half lengthwise and score the flesh in a criss-cross pattern with knife, cutting deep but not through the skin.
  3. Roast in the oven for 20 minutes until softened and golden brown.
  4. Spoon Natural Quark onto the roasted eggplant and top with parsley and goji berries.
