Yoghurt Veggie Wraps

Quark Veggie Wraps

  • 1 green capsicum
  • 1 red capsicum
  • 1 x eggplant
  • Olive oil, salt and pepper
  • Shredded kale
  • 1 x lemon
  • 500g Natural Yoghurt


  1. Slice capsicum and eggplant long ways and toss through olive oil and salt and pepper on baking tray, then roast for 10 minutes in fan-forced oven on 180°.
  2. Whisk lemon juice and natural yoghurt in bowl for sauce.
  3. Add roasted vegetables to wraps and top with shredded kale. Then spoon quark sauce over the top.
  4. Enjoy!
