- Sift together flour, salt, baking powder and sugar in a bowl.
- In another bowl, beat together egg and 1 cup Rokeby Farms Probiotic Filmjölk Yoghurt.
- Then mix in the butter and add in egg into flour mixture. Fold in the blueberries. Set aside for 1 hour.
- Heat a pan over medium high heat and add coconut oil. Pour batter onto the pan using approximately 1/4 cup for each pancake and brown on both sides.
- Serve with a drizzle of Probiotic Filmjölk Yoghurt and top with blueberries.
