Potato waffles

  • 4 small potatoes, grated
  • 1 cup milk
  • 1 cup self-raising flour
  • 1 egg
  • Pinch salt and pepper


To serve

  • 100g smoked salmon
  • Handful watercress
  • Half red onion, sliced thinly
  • Pepper


  1. Whisk together egg, flour and milk until a smooth batter forms, add grated potato, salt and pepper and stir to combine.
  2. Heat a waffle iron and cook batches of waffles until golden brown.
  3. To serve, top waffles with smoked salmon, watercress and red onion.
  4. Combine sour cream, Rokeby, salt and pepper to form a dressing and drizzle over waffles.
