Ingredients

  • 1/2 cup frozen peas
  • 1 avocado, chopped into 1cm cubes
  • 1/3 cup Rokeby Farms Natural Probiotic Yoghurt
  • 1 clove garlic
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked pepper
  • 2 slices of sourdough, toasted

Method

  1. Cook peas in a saucepan of boiling water for 1 minute, then drain and refill pot with cold water for another minute. Drain and set aside.
  2. Add avocado, Probiotic Yoghurt, lemon juice, salt and pepper, and mash lightly to combine. Set aside.
  3. Drizzle toasted sourdough slices with olive oil and rub lightly with half of a garlic clove on each slice.
  4. Top toast with pea and avocado smash and enjoy!
