Fresh basil + Tomato
Combine 100g feta with 1/4 cup Rokeby Farms Natural Probiotic Yoghurt and 1 tbsp chopped fresh basil and mix with a fork until well combined. Spread onto toasts then top with quartered fresh cherry tomatoes, fresh basil and cracked pepper.
Layer 90g smoked salmon onto toasts, top with finely sliced red onion and 1 tbsp capers. Drizzle over Rokeby Farms Natural Probiotic Yoghurt and top with fresh dill sprigs.
Roast Sweet Potato + Cashew
In a food processor add 3/4 cup cold roast sweet potato, 1/4 cup cashews, 1/4 cup Rokeby Farms Natural Probiotic Yoghurt, 1tbsp fresh basil and a generous pinch of salt and pepper and process until well combined but still chunky. Spread onto toasts before topping with a balsamic glaze drizzle and a little crumbled feta (optional).
Mix together 1/2 cup of your favourite nut butter with 2 tbsp Rokeby Farms Vanilla Probiotic Yoghurt and a pinch of salt and spread onto toasts. Top with sliced fresh banana, more Rokeby Farms Vanilla Probiotic Yoghurt and a sprinkle of cinnamon.
In a bowl combine 3/4 cup shredded coconut with 1/2 cup Rokeby Farms Vanilla Probiotic Yoghurt and 1 tbsp maple syrup and mix to form a thick spreadable consistency. Spread the coconut mixture onto toasts and top with grilled slices of fresh pineapple and a sprinkle of coconut.
