Method
- Cook meatballs over a medium high heat until golden and cooked through. Set aside.
- To prepare the salad dressing, mix the probiotic yoghurt, garlic, mint, lemon, salt and pepper in a small bowl and mix well.
- Assemble the salad on a large serving plate, topped with the fresh tomatoes and cucumber, red onion and the warm meatball. Drizzle over the dressing and sprinkle with fresh parsley.
