Lamb Meatball Salad

  • 400g lamb meatballs (20 small meatballs)
  • 200g mixed salad leaves
  • 1 small cucumber, sliced
  • 10 cherry tomatoes, halved
  • 1/2 red onion, sliced




  1. Cook meatballs over a medium high heat until golden and cooked through. Set aside.
  2. To prepare the salad dressing, mix the probiotic yoghurt, garlic, mint, lemon, salt and pepper in a small bowl and mix well.
  3. Assemble the salad on a large serving plate, topped with the fresh tomatoes and cucumber, red onion and the warm meatball. Drizzle over the dressing and sprinkle with fresh parsley.
