Chocolate Dipped Ice cream Sandwiches

Ingredients

Filling
  • 1/2 cup Vanilla Rokeby Farms Probiotic Yoghurt
  • 1 tbsp maple syrup
  • 2 tbsp coconut flour
  • 12 biscuits of choice
Dip
  • 100g dark chocolate, melted
  • 1 tbsp coconut oil, melted

Method

  1. Combine filling ingredients and mix well to combine.
  2. Sandwich 2 table spoonfuls of filling between 2 biscuits and set aside.
  3. Whisk together melted dark choc and coconut oil and dip half biscuit in, then place on a baking sheet.
  4. Freeze for 30 minutes. Serve immediately or store in freezer for up to 2 weeks in an airtight container.
