Blueberry Probiotic Chia Seed Pudding

Ingredients

  • 375mL Rokeby Farms Blueberry Probiotic Yoghurt (half of the bottle)
  • 1/3 cup honey
  • 1/3 cup chia seeds
  • Blueberries, to serve
  • Flaked almonds, to serve
  • 1 x banana (sliced)
  • 1/3 cup brown sugar
  • 25g butter

Method

  1. Place probiotic yoghurt, honey and chia seeds in a bowl. Stir well to combine. Cover and store in the fridge for 4 hours or overnight to thicken.
  2. Heat butter and brown sugar in saucepan over low heat and stir until it forms a caramel. Add bananas and coat in mixture. Remove and set aside.
  3. Divide among serving glasses. Top with caramelised banana pieces, blueberries and flaked almonds.
