Blueberry Donuts with Blueberry Probiotic Yoghurt

Blueberry Donuts with Blueberry Probiotic Milk

  • 2 cups self raising flour
  • 1/3 cup caster sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil
  • 1/2 cup Rokeby Farms Blueberry Probiotic Yoghurt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup blueberries
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1/3 cup Rokeby Farms Blueberry Probiotic Yoghurt


  1. Preheat the oven to 180°C and lightly spray a donut tray with cooking oil.
  2. Mix together the flour, sugar, baking powder, and salt. In a separate bowl mix the oil, Probiotic Yoghurt, eggs and vanilla extract. Then gently add the wet ingredients to the dry ingredients and mix until well combined.
  3. Using a spoon, scoop the mixture into the prepared donut tray, filling each mould about ⅔ full.
  4. Bake for 10 minutes or until the donuts are golden. Let them cool in the tray for a few minutes and then transfer to a cooling rack to cool completely. While cooling, make the glaze.
  5. To make glaze, combine the blueberries, powdered sugar, vanilla extract and probiotic yoghurt in a blender or food processor. Blend together until smooth. Pour into a bowl.
  6. Once the donuts are completely cooled, dip each donut in the glaze and let is set for 15 minutes. Enjoy!
