- 170g Natural Yoghurt
- 1 avocado
- ¼ cup frozen minted peas
- 1 lemon, juice
- salt and pepper, for seasoning
- 2 slices of crusty bread
- Place peas in a bowl and microwave for 30 seconds.
- Once cooked, add the avocado and mash with the back of a fork.
- Add Natural Yoghurt, S&P to the bowl.
- Cut lemon in half. Squeeze one half of the lemon and mix until well combined.
- Lightly toast the crusty bread.
- Place toast on a plate and top with yoghurt-avocado mixture.
- Squeeze over remaining half of lemon, garnish with mint leaves.
