Avocado Smash

Ingredients

  • 170g Natural Yoghurt
  • 1 avocado
  • ¼ cup frozen minted peas
  • 1 lemon, juice
  • salt and pepper, for seasoning
  • 2 slices of crusty bread

Method

  1. Place peas in a bowl and microwave for 30 seconds.
  2. Once cooked, add the avocado and mash with the back of a fork.
  3. Add Natural Yoghurt, S&P to the bowl.
  4. Cut lemon in half. Squeeze one half of the lemon and mix until well combined.
  5. Lightly toast the crusty bread.
  6. Place toast on a plate and top with yoghurt-avocado mixture.
  7. Squeeze over remaining half of lemon, garnish with mint leaves.
