How are Rokeby Farms Quark Yoghurts made?

We source fresh milk from a collection of farms located in Gippsland, Victoria. The raw milk is chilled and transported from the farms to our facility in Melbourne. Our fresh milk is separated to reduce naturally ocurring fat to around 1%. We pass our milk through a series of filters to remove some of the water and lactose which naturally increases protein and calcium. Our fresh cold filtered milk has three times the protein and calcium of regular milk. We flash pasteurise our milk for just a few seconds to make it is safe to consume and then homogenise to stabilize milk and fat protein. Fermentation happens the authentic Swedish way, with a special blend of cheese and yoghurt cultures, at a lower temperature for a longer time. Rokeby Farms Probiotic Milk is made the authentic Swedish way by slow fermenting fresh whole milk with a specific combination of live culture and probiotic strains. We source fresh milk from local Gippsland farms which is then pasteurised to ensure it is safe for consumption.

We add a mix of 15 live cultures and probiotics after the milk is pasteurized to ensure they are living in the finished product.

It is then poured into bottles and remains chilled, ready to enjoy!

We add 15 live and active cultures and probiotics, including Bifidobacterium – live microorganisms proven to help maintain healthy gut flora and regulate your digestive system.

Rokeby Farms Quark Yoghurt is a range of yoghurts, made the authentic Swedish way with fresh milk also sourced from local Gippsland farms. We culture our milk at lower temperature to create a quark yoghurt that is naturally rich in protein and mild in flavour.

Texture wise, Quark Yoghurt is a more spoonable  whereas our probiotic milk is thinner and can be enjoyed simply in a glass.

Why is the texture of Rokeby Farms Quark Yoghurt much thicker than regular yoghurt?

Our Quark Yoghurt is made by cold filtering fresh milk to increase the natural protein to 3x the protein in regular milk. This means we use 3 litres of milk to create 1 litre of our Quark Yoghurt. We also slow ferment our yoghurt at lower temperature for longer and this, along with the very high natural protein content of the Quark Yoghurt (10% protein) creates a texture that is smooth and thick. Thicker in texture even than most Greek yoghurts.

Why don’t you source all of your ingredients from Australia?

Fresh milk is the main ingredient in all of our Rokeby Farms products which we source from local farmers in Gippsland, Victoria. However, sometimes it is not possible to source everything from Australia however we always source locally wherever we can ensure the right quality of ingredient, a reliable supply partner, product availability, cost, proper allergen management….amongst other critical considerations. For example, our live yoghurt cultures are sourced from a leading supplier based in Europe who we believe is the most reputable in supplying such a unique ingredient.

Why do your flavoured Quark Yoghurt products contain cane sugar?

For those people who enjoy flavoured yoghurts rather than a plain natural yoghurt we have three products in our range (Vanilla, Strawberry and Coconut). We add a small amount of sugar to enhance the flavour profile of the products. We chose to use natural cane sugar as the sweetener rather than other sugars such as fruit juice concentrate as we were able to keep the total sugar level as low as possible by using cane sugar at the same time achieve the desired flavour profile. Our flavoured Quark Yoghurts contain 30-50% less sugar than other flavoured yoghurt products.

Our Rokeby Farms Quark Yoghurt is an excellent source of natural protein and calcium. In fact, each 170g pot of our Natural quark yoghurt contains 17g of protein which is one-third of your daily protein needs and over half your recommended daily intake of calcium.

Is your Quark Yoghurt process the same as the straining process used by Greek yoghurts such as Chobani?

It’s not the same process that greek yoghurt makers such as Chobani typically use. We cold filter the raw milk before the yoghurt fermentation process begins. This removes some of the water and lactose from the milk but increases the natural proteins and minerals (including calcium) in the milk. The items that are removed are added back as ingredients in making other products.

Typical commercial greek yoghurt making on the other hand subjects the yoghurt (after fermentation) to centrifugal separation to remove the whey. The whey mix is typically made up of water, lactose, some minerals (including some calcium) and proteins and is often referred to as acid whey due to its high acidity which makes it hard (impossible) for it to be re-used as an ingredient in other products.

So they are different process with equally different outcomes.

Our Rokeby Farms Breakfast Smoothies are made with PET packaging which is fully recyclable. Our Quark Yoghurt products are made with polypropylene which is fully recyclable. The foil seal that helps keep our yoghurt fresh and safe to eat is not recyclable.

Is Rokeby Farms Quark Yoghurt made with a ‘pot set’ process?

Our Rokeby Farms Quark Yoghurt is not pot set meaning it is not fermented inside the pot. Instead it is batch fermented before being cold filled into our little pots ready for eating. There is no difference nutritionally between pot set and our process.

How is the sugar so low in Rokeby Farms Quark Yoghurt?

Rokeby Farms Quark Natural Yoghurt does not contain any added sugar or fruit juice.; the sweetness comes from the naturally occurring sugars in the milk. For our flavoured variants, we have recently removed the apple juice added to our flavoured yoghurt varieties and replaced this with a much smaller amount of cane sugar. This has resulted in a reduced total sugar content across the range and the feedback is that the overall taste has been improved.

The texture of our Quark Yoghurt is smooth but thick, thicker than Greek yoghurt in fact, but with a milder taste. This makes it great on its own or with cereal for breakfast, spreading in sandwiches as a nutritious replacement to cheese or a healthy substitute for cream or cream cheese in cooking.

Our Rokeby Farms Breakfast Smoothies and Quark Yoghurts are not lactose-free but are low-lactose and may be able to be enjoyed by people who are sensitive to lactose. Lactose is the naturally occurring carbohydrate (as sugar) found in milk. To help digest lactose your body contains the enzyme lactase however some people have difficulty digesting the enzyme which makes low-lactose or lactose-free products a potential option. The most common way to reduce lactose enzyme in products is to add lactase enzyme (similar name, but different) which naturally converts the lactose into more easily digestible carbohydrates (glucose and galactose). According to Australian food regulations, food/beverages that claim to be low lactose must contain no more than 2g per 100g, and for a food/beverage to claim it is lactose-free it contain no traceable amount of lactose. Here at Rokeby Farms, our approach to reducing lactose is slightly different – our unique cold filtration process (which we use to increase the natural protein level in the milk) starts by completely removing (not converting) some of the naturally occurring lactose from the milk. We then add lactase enzyme to help convert some of the remaining lactose left in the milk.

Yes, all of our Rokeby Farms products are made with GMO free ingredients.

Are the farmers paid fairly for their milk?

We absolutely recognise the hard work our farmers put into producing their high quality milk day in day out. MADE pays around 10 cents above the farmgate price per litre on average for its milk which is significantly above what our larger competitors pay to purchase their milk.

Are the cows happy cows?

Almost all of the farms we source our fresh milk from are family owned and have been for generations. When we meet our farmers you see first hand the passion they have for their land, their craft and most importantly their herds. Their cows are predominantly grass fed, thanks to the exceptionally high average rainfall of the Gippsland region, and they are free to roam the paddocks.

Is the milk used homogenised?

Yes, we homogenize all of the milk that goes into making our Rokeby Farms dairy products to ensure a consistent taste and texture. Homogenization is purely a physical process, and doesn’t involve anything being added to our milk. Without homogenization, the milk fat and protein would start to separate.

Homogenization is purely a physical process, and doesn’t involve anything being added to our milk. Our Rokeby Farms Quark Yoghurt is made with pasteurised milk as any normal yoghurt is made so it is safe for pregnant women to consume, however it needs to be chilled at all times in the fridge below 4ºC so please ensure to keep safely in the fridge. I see there is no cane sugar, where does the sweetness come from?

In our Natural variant, the sweetness comes from the naturally occurring sugars in the milk. In our flavoured variants there is also fruit juice added, and in the Strawberry variant there are natural sugars in the fruit.
